CATTLE CALL – This “can’t keep it on the shelves” blend consists of sea salt, garlic, black pepper, onion, spices, red pepper, sugar,cornstarch (anti-caking agent), papain (a natural tenderizer) ; good as a rub, “add in’ seasoning in ground meat, and as a flavor booster in marinades; customers say it makes the best steaks ever (used as a seasoning in a olive oil/wine marinade); Member of the “Top 5 “Meat” Seasonings”
PORK SEASONING – This blend of seasonings consists of coarse black pepper, garlic , salt, onion powder, white pepper, ginger, hickory smoke powder and papain (a natural tenderizer); it can be used as a “shake on” seasoning, as a rub, or as the seasoning in a marinade

BOHEMIAN FOREST RUB - This European style rub is blended from a mixture of crushed brown mustard, garlic, rosemary, black pepper, Mediterranean thyme, savory, parsley, lavender and sage. It is an ideal seasoning for all types of poultry and pork. Try making an "European Style Turkey" Use 1-2 t. of Bohemian Forest per pound of "meat". CITRUS-HERB FISH SEASONING – This wonderful blend consists of grapefruit peel, lemon peel, lime peel, orange peel, thyme, savory, marjoram, basil, black pepper, citric acid, salt; depending on the fish/seafood, it can be used as a ”shake on” seasoning, or as a rub; also great when added to cracker or bread crumbs; works well with chicken also. RIB and CHICKEN RUB (aka "George Peake Seasoning) – This “not just for ribs rub” is blended from flake salt, sugar, black pepper, paprika, ground Grenadian nutmeg, sage, cayenne and red pepper; great for ribs and chicken; note: a few good customers have added this seasoning to a little brown sugar, then used it for their ribs
RIB PARBOIL SPICES – This blend comes pre-measured in food grade muslin bags. The blend consists of a complex mixture of yellow and brown Canadian mustard seeds, Jamaican allspice, cracked China cassia, cracked Turkish bay leaves, dill seed, Zanzibar cloves, cracked China ginger, Tellicherry peppercorns, star anise, Moroccan coriander, juniper berries, West Indies mace, cardamom and medium hot crushed red peppers; you need to try these once, … your ribs will be so full of flavor, and the meat will fall of the bones; simply use 1 muslin bag for a large stockpot (should hold up to 3 slabs), parboil, then bake or grill as usual ( use a rub or sauce, most customers use a rub when the ribs have been parboiled); Salt Free
CRAB, SHRIMP, & LOBSTER SPICES – For your convenience this blend comes pre-measured in a food grade muslin bag. This flavorful blend is mixed from yellow and brown mustard seed, allspice, coriander, Ceylon cloves, cracked bay leaves, cracked ginger, Tellicherry peppercorns, chili pepper, dill seed and caraway seed; use this traditional blend for steaming/boiling crab, shrimp, lobster or fish; when making fish/seafood stock, simply drop in one muslin bag of seasonings to add great flavor and dimension to your stock; note: since crab, shrimp and lobster have short cooking times, it is best to simmer the water with the seasoning bag added for 20 minutes prior to adding the shellfish; Salt Free

RAS el HANOUT – This Moroccan blend consisting of cloves, allspice, black pepper, mace, cardamom, cinnamon, ginger, turmeric, rosebuds, cumin, white pepper, coriander, nutmeg, saffron, bay leaves and paprika has quite the reputation!; it traditionally means it represents the best spice blend of the shop (note it contains saffron!) and it definitely is one of the best of our shop; today this blend is frequently known as a “Mediterranean curry”, a delicious one, although not hot like most people associate with curries; pairs well with lamb, game, chicken.
